Turmeric and Rosemary mixed extract namely ‘Nourishx’ extract was applied to meat, poultry and processed fish muscle to investigate its effects on muscle sensory evaluation, biochemical parameters, microbiological proliferation, and biogenic amine (BA) formation during storage at 4°C for 18 days. Sensory evaluation determined the shelf life of meat, poultry and processed fish muscle to be 12 days for the controls and 15 days for the turmeric based -treated samples

How does microbial spoilage affect my food? Microbial spoilage is often a major factor affecting the shelf life of food. Plant Extract blends

Result:
The combination of Turmeric, Rosemary Green Tea ingredients and low temperature controlled the mesophilic, psychrophilic, BAF and Pseudomonas bacterial growth; delayed the formation of negative biochemical parameters and BAs; and extended the shelf life of meat, poultry and fish. Based on the sensory evaluation, the turmeric coating enhanced the shelf life of meat, poultry and fish muscle without changing its appearance, flavor, and texture up to day 15 of storage at 4°C. This Project confirmed the biopreservative effect of turmeric and other extract against spoilage bacteria and suggests its potential use in the meat, poultry and fish-processing industries.

The Chemistry of Colour

 

When it comes to meat and poultry, colour changes are linked to specific oxidation chemistry. Most consumers base their protein buying decisions on a fresh appearance, and equate appealing colour with quality and freshness.
